Memorial Day/Last Week of School Meal Plan

Looking forward to an awesome week!  It's one of those weeks where I'll make my plan but be prepared that some of these may get bumped for next week.  We have some fun plans, but Mark's back is acting up so they may get put on the back burner.  We'll see.  Either way, it's looking to be a yummy week!

 Wednesday (dance):  salmon, grilled rice cakes, sugar snap peas
Thursday:   Chicken wrap sandwiches (PW's crispy chicken strips, mustard sauce, julienned carrots, lettuce), fruit, corn on the cob
Friday:  BBQ sweet/spicy bacon chicken, rice, baby broccoli
Saturday lunch:  Grilled chicken sandwiches with KAF beautiful burger buns, chips, fruit
Saturday dinner:  Crispy Shrimp Tacos, Mexican Rice, refried beans
Sunday brunch:  Egg Tarts, hash browns, fruit
Sunday dinner: Ribs, corn on the cob, cole slaw, cut up veggies
Labor Day breakfast:  Breakfast tacos
Labor Day dunch:  Cheeseburgers w/brioche burger buns or jalapeno cheddar buns, onion rings, baked beans, devilled eggs, jigglers, mint chocolate chip ice cream cake
Tuesday:  Asian wings, rice, sugar snap peas
Wednesday (dance):  Trout, smashed new potatoes, green beans
Thursday:  Fried Rice, pot stickers, baby bok choy
Friday:  Meatball subs, salad

Updated:  Looking for a crazy-good, super yummy, totally different side dish?  Last night I made Grilled Rice Cakes.  You make sushi rice (super easy in my awesome rice cooker, an yes, sushi rice is necessary, you need it's stickiness).  While it's cooking simmer 2T soy sauce and 2T mirin until reduced by half.  Cube up 1/2 a stick of butter (I know, I know) and whisk it into the reduction.  Divide the rice into 4 sections.  Place each section in a square of plastic wrap.  Wrap it up in the plastic wrap and form it into a rectangle.  Heat the grill.  Unwrap the rice, brush it with soy/mirin/butter mixture and grill 3-5 minutes until crispy, brush with mixture again and turn.  Cook until crispy on second side and brush again.  Serve.  Really good.  I'm not 100% sure if it's a texture thing, flavor thing or a combination but we really enjoyed it.  I'm looking forward to experimenting with other flavors soon.  Next week when I make the asian wings I'll probably make them again using the asian sauce instead of the soy/mirin mixture.
